• ½ medium watermelon
• 6 cups baby arugula
• 12 ounces feta cheese
• 1 cup of fresh mint leaves
• Balsamic glaze

1) Cube the watermelon into bite sized chunks.
2) Julienne the mint leaves into thin strips.
3) Place the washed and tried arugula on to platter. Top
with watermelon cubes and sprinkle on the feta cheese.
4) Lightly drizzle on the balsamic glaze and serve.
